In fairness, this is the 3rd or 4th time she's made croissants, and she's developed a few "tricks" to help the process. I think a new post dedicated to croissant mastery is in order.
Thanks Justin! My third attempt. Each time is better because I've tweaked a few things. Taste wise, I think my second batch was good. Beauty wise, these are the best looking.
But guess what, they aren't hard to make :)
Caitlin is OBSESSED with croissants. We've had to start buying them in small batches because she won't settle just for one or two. I might just have to break down and try making them after all...
